In many Indian meals, there really isn't a "main dish" -- more like many
dishes plus chutneys, raita, etc. that you can add or not (they are
often very spicy, and children and some adults don't like that much
heat). There might be a rice dish, dal (a thin sauce made from lentils),
curried vegetables, one or two chutneys, raita (a yogurt sauce), breads
such as chapatis or puris, and perhaps lassi (a yogurt drink that may be
either sweet or savory). This combination makes for complete protein, as
well as a variety of legumes and vegetables.
Here is a recipe for biryani:
Vegetable Biryani
Rice:
1 1/2 Cups Basmati Rice
3 Tbsp Ghee
Salt to Taste
*** Vegetables ***
6 Onions, Chopped
2 Cups Assorted Vegetables: Potato, Carrot, Squash, Cauliflower, Peas,
Etc., Boil or steam till about half cooked through
garlic powder
ground coriander
turmeric
curry powder
cayenne
salt to taste
saffron dissolved in two tbsp hot water
rose water
raisins
cardamom pods, slightly crushed
Parboil rice, salt, and ghee in about 4 cups water. When almost cooked
(20-30 minutes), drain off water. Preheat oven to 350 F. Fry onions in
ghee or oil till golden brown. Add garlic powder, coriander, turmeric,
curry powder, cayenne, salt, and cook two minutes. Add 1 cup water and
vegetables and cook til vegetables are tender and sauce is thick and
coats vegetables. Layer rice, vegetables, rice, vegetables, and rice.
Sprinkle with saffron, rose water, cardamom and raisins. Cover with foil
and bake 20 minutes at 350 F.
