What should I get?

Mainly road with some light off road I would probably look at a cross bike, I think in the UK they may be called winter/Audax bikes, which could be something like this: http://www.ribblecycles.co.uk/bbd/road-track-bike/ribble-7005-cx?part=BB14ARIB7005CX&sub=conf_BBRW&bike=1 This bike will accept tires up to 38 wide, not sure if the rims will though you may have to contact Ribble to find out. Also check the internet for discount codes if you go this route because I think there is a 12% off code.

Anyway I'm kind of guessing if this fits your needs, you can see the sight I gave you does allow you to make changes to the groupset to fit your financial needs, I put 105 on because I think that's the sweet spot of the Shimano lineup between weight and durability but you can drop that a level if you think it's too pricey.

No we still call them cyclocross bikes, Audax is slowly fading away in favour of Sportive bikes. Pretty much the same thing although Audax is more lightweight tourer and Sportive would at one time have been GT (sport tourer) and effectively is a comfy relaxed race bike. If you want flat bars them a Hybrid would be perfect but a Cross bike is an excellent all rounder, robust, comfy and easy to convert into a do it all road bike. A winter bike is anything you like really.

I'm not from the UK so when I looked up Cyclocross bikes in the UK nothing came up so I thought they weren't called that there, that's why I was bit questioning what they were called in my post. Glad you chimed in on this.
