Check at your local bike shops, especially ones that specialize in racing bikes. They will have info. Also, you will need a group to train with. Check out the local race teams. You can get a list of them from usacycling.org. I'd advise doing some group riding (a lot of it actually) before trying racing. Even in Cat 5 the racers will be moving pretty fast, and if you are dropped you really aren't even in the race any more.
