You will need an aftermarket seat post. As for stability, I think it depends on the rider an the terrain. You have to be careful about side-hilling. That includes driveways.

I don't know how far your balance has gone, but before you give up completely on two-wheeling, I'd like to suggest "feet-forward" comfort bikes like the Electra Townie and Trek Pure. These give you a low upright posture with the feet forward to extend reach to the pedals. This allows you to get your landing gear down and firmly on the runway very quickly. I brought these up because of my experience with customer who also thought he needed a trike. I sent him on a test ride on a Townie with a step-through frame, and it was love at first sight.

The trike you've linked sure looks industrial, heavy, and expensive, but I'm sure it's well made. You might want to call some local shops, though, to ask what trikes they have available.
