Try farkin.net . I've seen a few things in Melbourne come up in their for sale forums. 26inches.com might also be worth a look, though there's a fair bit of overlap (eg most of the literate farkinners).

Have you investigated Bicycle Recycle down in Moorabbin? Might pay a slight premium over private sales but at least you can browse a fairly good range of second hand mtbs...

If you're just after a commuter MTB, you can get a pretty decent new one for around $350 - eg a Trek 3700 or similar.
