If you are replacing CARTRIDGE bearings, then you can read the size you need on the plastic shroud that covers at least one side of each of the cartridges ...garyreiter said:
If you are replacing LOOSE bearings, then the size is probably 1/4" (you'll need nine per side) ... TWO EXCEPTIONS which are known to me (there may be others) whose bearings are smaller would be the Maillard Helicomatic hub + the earliest Shimano Dura Ace Freehub.
If bearings are Shimano, you can find the parts diagram for the hub on their website. For example:
