If you are replacing CARTRIDGE bearings, then you can read the size you need on the plastic shroud that covers at least one side of each of the cartridges ...

If you are replacing LOOSE bearings, then the size is probably 1/4" (you'll need nine per side) ... TWO EXCEPTIONS which are known to me (there may be others) whose bearings are smaller would be the Maillard Helicomatic hub + the earliest Shimano Dura Ace Freehub.
 
If bearings are Shimano, you can find the parts diagram for the hub on their website. For example:
