I had to make a few emergency stops on my last ride and as a result the valve stems (presta) on my road bike are now at a slight angle. Can I just ignore this or will this eventually lead to a flat if not fixed?

It's probably putting a lot of extra stress on the rubber near the valve. If you have to stop that hard again, it might rip.

Are you riding sew ups? I have heard of that with them...
Anyway, if you let the air out, and reinflate that might fix it, if not, I would probably take the tire off and put everything back together nicely. I understand that this condition can lead to blow outs...

I sheered one right off doing that-but it was a shrader...It takes 2 minutes to fix it, I would

If you're riding clinchers you can deflate the tires enough to "slip" them on the rim with your hands, straightening the valve stems. Easier than taking things apart.🙂
