Yes. There's a layer of foam inside which you squash the air out of
when you roll up the mat and seal the valve. When you undo the valve
the foam expands and draws in air, which you keep in by sealing the
valve. You can top them up with breath for a firmer mat if you want (I
usually do).

Depends which one: there are different models ranging from thicker and
more comfortable to thinner but lighter. The one for you is the one
that best suits your needs, and if 10cm of foam is what you like then
probably one of the thicker ones. They're havier and bulkier to carry
though.
