I've been having extreme diarhea after riding lately. Am I dehydrated? How much should I be drinking for a 2 hour ride in the winter.

Right after getting off the bike? How are your other bowel movements? This could be a sign of three common things or could be a sign of a more serious problem.
1. The constant dehydration - hydration cycle
2. Lack of fiber in your diet
3. OVERTRAINING

Its not immediate its delayed about an hour or two. I think it may be as a result of overtraining because its not every time but rather on my longer rides.

Oh this is nasty stuff... You don't mention how your other 'movements' are, and if you have any other ones (yum...)
It's really hard to say without knowing a whole lot more 'personal' information like your meals and times, training times, training load, timing of your normal movements... For example, your ride may be impinging on your normal movement timing and when it has to come later, it comes as a mess.
