blueberry muffins

  1. Yesterday I made the Blueberry muffins from Low Carb & Loving it.
    Oddly, they filled my 12-cup pan when they were supposed to only fill 6
    cups.

    They did turn out great, though. Soft and moist with a good flavor. My
    husband even ate a few! And he's not low-carbbing and typically avoids
    special things I make. He said they are good and I should make them more
    often. I like the recipe because it is all real ingrediants and I didin't
    have to buy anything special, which I avoid doing. I grind my own soy
    flour. Yesterday I had a hot muffin with melted butter on it. Today I'll
    try one with cream cheese.

    What is "Low Carb & Loving It"? What flour do they use? I'd like to make
    these, as an occasional treat, but I probably couldn't -- I tend to
    overeat muffins. I've made some low carb muffins before, and they were
    pretty good (if quite fibrous), but I ate too many too quickly. I wonder
    how well they freeze? That would be an option -- only eat them on
    weekends, after a 15-20 mile bike ride.

  5. Just to see George Stella photos is a motivator.

    Muffins will freeze well and keep them out of sight and handy with needed.
    Use cupcake papers and tins for ease.
    microwave for 30 seconds, spread with cream cheese before thawing to prevent
    a mess! what a treat!

  6. They also keep quite a long time in the refrigerator. One thing I have
    noticed is
    most LC baked goods, unlike regular baked stuff, don't last very long
    without refrigeration.

  15. I love Good Eats. that guy is very smart.

    Wolfgang Puck just had a very good show on salads and how to make a
    vinaigrette dressing. Just change the sugar to spenda or stivia (in greens
    the stivia tastes fine)

    While I'm thinking of it, Emeril reluctantly had a Low carb show- He made
    tacos with jicama slices as the taco shell. I'm going to have to look that
    one up- I haven't used Jicama yet, but at 2 carb for 50 Grams worth a look.
    if you have some around, let us know what you think of this idea.

    For Good Eats, I've made quite a few recipes. I now brine many meats,
    which I never did before watching his show. For intance, I've brined
    every turkey I've eaten for the last several years.

  17. I enjoy Good Eats too. He cracks me up especially when he makes his own
    "gadgets". Very ingenious character! :-)
    Jicama is very fibrous, tastes a bit like an apple and has much the same
    texture so I'm curious how you would use it to make a pseudo-taco shell.
    It think it would snap in two when you tried to bend it.
