Antipasto Salad
NYPD Pizza Antipasto Salad

I tasted a wonderful salad at a tailgating party last year. I have been
hungry for the salad ever since. The salad was romaine lettuce,
marinated artichokes, roasted red peppers, chunks of salami and cheese,
with an Italian dressing. Does anyone have any recipes for something
similar?
Antipasto Salad
Romaine lettuce, cut up
1/4 cup fresh basil
1/4 cup fresh parsley
2 Tbsp fresh chives, chopped
1 bunch artichoke hearts, quartered ( I like the ones marinated in the
jar)
1/4 pound hard salami, cut into pieces
1 cup frozen petite peas, frozen ( not cooked)
1 roasted red pepper ( jar type is fine)
1 red bell pepper, cut up
Parmesan cheese, shaved thin
toss greens and herbs together..
Steam asparagus, add to greens
dressing:
1/2 cup extra virgin olive oil
2 Tbsp baslamic vinegar
1 Tbsp white wine
1 Tbsp lemon juice
1 pinch each celery seed, dry mustard
1 clove garlic, minced very fine
dash salt and pepper..
Combine and shake well.
NYPD Pizza Antipasto Salad
8 oz. salad mix
2 oz. (4 pieces) provolone, sliced and quartered
1 oz. (4 pieces) salami, sliced and quartered
4 green olives, marinated
1 oz. mushrooms, marinated
4 artichoke hearts, marinated
4 whole pepperocini peppers
1 roma tomato, cut into 4 wedges
1 oz. (4 slices) roasted red bells
1 oz. (3 slices) red onions
2 oz. (1/4 cup) black olives, sliced
1/2 oz. (1 tsp.) dried oregano
4 oz. (1/4 cup) your favorite Italian dressing
Heat caprese bread in oven for 2 minutes. Place salad mix on chilled oval
plate. Place provolone and salami around greens in pairs at 7 and 11
o'clock
Place roma tomatoes, mushrooms, artichokes and pepperocini around salad
plate between cheese and salami. Add onions, red peppers and black olives
over center of salad. Sprinkle with oregano. Pour dressing over top.
