This is a quick & easy breakfast I just threw together this morning. Because
I made it up I don't have exact measurements or nutrition details.
Pre-cooked medium/large shrimp were on sale this week and I bought a bunch
and needed to come up with new uses for them. I sent DH to work with Shrimp
Caesar Salads and came up with this for breakfast. You can start with raw or
cooked shrimp.
Melt about a tbsps butter in a sautee pan/frying pan and add an equal amount
of olive oil. You should have enough liquid in pan to coat it and become a
sauce for the shrimp - so adjust the amount of oil/butter to how much shrimp
you are making. (i made about 20 med/large)
Add 2 cloves garlic, minced or cut up how you like it (or just smash it,
brown and remove if you prefer not to eat it but want the flavor)
When the garlic is starting to brown slightly throw in the shrimp. If they
are raw wait till they are nice and pink. Mine were cooked so I just wanted
them to heat up and mix with the flavors.
Then I transfered to a plate and put less than an oz of crumbled gorgonzola
over all the shrimp.
It was simple and delicious. High in fat w/ all that butter, oil and cheese
so watch out if you are keeping it low carb/low cal
