  1. New Orleans Pork-Sweet Potato-Fruit Casserole

    Serving Size : 4
    1 Tbsp Vegetable oil
    4 Pork chops(3/4" thick)
    2 Sweet potatoes,fresh,large
    2 Onions,large,sliced 1/4" thick
    1 1/2 cup Orange juice,fresh squeezed
    5 Whole cloves
    1/2 tsp Salt
    1/8 tsp Tabasco sauce
    2 Pears,peeled,cored,wedged
    1 Tbsp Cornstarch
    1 Tbsp White wine vinegar
    2 Tbsp Parsley,chopped,fresh

    Heat oil in large skillet; brown chops on both sides.
    Arrange potato and onion slices around chops.
    Combine orange juice, cloves, salt and Tabasco; pour over vegetables.
    Cover and simmer 30 minutes, or until chops are tender.
    Add pears; cover and cook 10 minutes longer.
    With slotted spoon, remove meat, vegetables and pears to serving platter.
    Remove and discard cloves.
    Combine cornstarch and vinegar; stir into liquid in skillet.
    Cook until mixture boils and is slightly thickened.
    Pour over meat and vegetables; sprinkle with parsley.
