Try Clarence Street Cyclery, about 10 minutes walk from Circular Quay, the Sydney ferries terminal.
It sponsors track cycling (Clarence Street Cup), track riders and has trackies on their staff although it is mainly a road, MTB and recreational outlet. Although Australia has prominence in track racing, there is no specialised track LBS in Sydney since Peter Bundy Cycles closed down.

Don't know about LBS's specialising in Track stuff in Sydney, but www.kookiebikes.com (Melbourne) is importing Track components. 🙂
