Conversely, I have noticed significant pull from road crown when
riding my BA 28 x 2.35" - and I'm not really getting used to it.
Maybe
my pressure is too low at 3 bar (40 - 45 psi) but I like that for
non-crowned roads.

Yep, you've got the pressure too low, which makes it go squelchy like
that. Also, you'll use less energy with a higher pressure (around 55-60
is nice), even if you do have to ride slightly lighter on the seat over
very bumpy sections.
The big apple just isn't designed to be run at low pressures, the
sidewalls are too flimsy. When you're looking at the recommended
pressure, bear in mind that it's only designed to take half your weight
at a time, so it's usually good to use the high end of the given
pressure range.
