  1. Anyone have a good recipe for banana-oatmeal bread or muffins? We
    over-bought bananas the other day, and it's time to make banana bread.

    i use the recipe in the fannie farmer cookbook. gets raves all the time.

    I'll find the recipe and stick a bookmark in the book. This time, I'm
    going to go with Sue's. I'm trying to use more whole grains, and her
    recipe has both oats and whole wheat. And she *was* first! ;-)

    No oats but I can't see what harm would be in adding half oats and half
    flour.

    (1) Sift 2 cups flour with 1 tsp. double acting baking powder and 1/2 tsp.
    baking soda and 1 tsp. salt. (2) Cream together 1/2 cup of butter with 1
    cup sugar. (3) Blend in 2 eggs and beat well. Add one cup of mashed ripe
    banana. Mix well. (4) Stir in dry ingredients and fold in 1/2 cup walnuts
    or pecans (chopped and optional) and 1 tsp. vanilla extract.

    Pour into greased bread pans, pushing the batter into the corners and
    leaving the center slightly hollow. It will rise as the bread bakes and
    will indicate when it's done. Bake at 350F for 60 minutes. Cool well
    before slicing.

    Your mom's recipe is like several of my mom's. They don't say what *size*
    pans to use! Way back when, I just knew. Now, I'm clueless and never make
    some of Mom's quick breads.

    Banana-Oatmeal Bread

    a.. 2 large ripe banana - mashed
    b.. 1 cup old-fashioned oats
    c.. 2 cups all-purpose flour
    d.. 1/2 cup milk
    e.. 1 cup packed brown sugar
    f.. 1 large egg
    g.. 2 additional large egg whites
    h.. 7 tablespoons vegetable oil
    i.. 1 tablespoon baking powder
    j.. 1/2 teaspoon baking soda
    k.. 1/2 teaspoon salt
    l.. 1/2 teaspoon ground cinnamon
    m.. cooking spray to coat pan
    Preheat oven to 350 degrees.

    Combine brown sugar, vegetable oil and all eggs in a large bowl; beat
    well
    at medium speed with mixer.

    In a seperate bowl, combine banana, oats, and milk; add this mixture to
    the
    sugar mixture, beating well.

    In yet another bowl, combine flour, baking powder, baking soda, salt,
    and
    cinnamon; stir with a whisk. Add this to sugar and oats mixture; beat
    until
    just moist. Spoon batter into a 9 x 5-inch loaf pan coated with cooking

    spray.

    Bake at 350 degrees for 1 hour and 10 minutes or until a wooden pick
    inserted in center comes out clean.

    Best when served hot with a pat of butter.

    INGREDIENTS:
    a.. 1/2 cup shortening
    b.. 1 cup white sugar
    c.. 2 eggs, beaten

    I still have one of the bread pans! D'oh! They were Pryex glass loaf pans,
    1-1/2 quarts. She switched later to slightly larger metal pans but I don't
    think she ever changed the recipe.

    Someone else might. <G> I'm just not a fan of maple unless it's on
    pancakes or similar. Banana bran does sound intriguing, though. Do you
    suppose a person could use corn syrup or honey in place of the maple?

    Grrrr! We just got back from the store, where we bought the wrong size
    loaf pans - I'm not going back out there for disposable pans (we don't have
    enough for real pans right now). Sue or anyone ... can you recommend a
    baking time for the above recipe, in 11-34x5-1/2x3-1/4" loaf pans? I'm
    figuring three loaves instead of four (we have 8 overripe bananas), or am I
    off on that, too?

    Check with a toothpick after 40 min. Be sure to hit the center.

    I made three enormous loaves tonight. I didn't care for it 2 minutes after
    it came out of the oven, but as it cools, it just gets better and better.
    I did goof up by baking it in disposable pans that were too big for the
    recipe. They baked for an hour and 20 minutes. The outside edges got a
    little too well done (like there's a thick crust all the way around from
    baking so long in very thin pans). ALL MY FAULT!

    I'm planning on making future batches into muffins. Mmmmmm! And no more
    batches including 8 bananas and a dozen eggs! *grin*

    Wow- that's a lotta banana bread! I've done muffins before (the big
    muffin size) and it works out well. Muffins are handy for taking for
    lunch (although I can only eat 1/2 at a time of the big ones) and for
    freezing.

    This is heavy on the oatmeal and whole wheat flour. Very healthy but
    the texture is going to be different from typical banana bread. I
    often add mini-chocolate chips which makes it .... healthier of course

    Possibly honey, but I am not sure the effect would be as good. I am not
    a fan of corn syrup. Now that is is in almost EVERYTHING, I have become
    aware of a difference in flavor that it imparts. Hard to explain. It
    is sort-of a dull sweetness???? I dunno.
