    Chicken Fajitas

    1/2 cup olive oil
    1/3 cup lime juice
    1 teaspoon sugar
    1/2 teaspoon salt
    1/4 teaspoon cumin
    1/4 cup red wine vinegar
    1/3 cup onion -- minced
    1 teaspoon oregano
    1/4 teaspoon pepper
    3 cloves garlic -- minced
    1 red bell pepper -- julienned
    1 green bell pepper -- julienned
    1 yellow bell pepper -- julienned
    2 pounds skinless boneless chicken breast -- julienned
    8 10 inch flour tortillas

    Combine all ingredients, except tortillas, in a large bowl, mix well and
    refrigerate overnight.
    Drain mixture. In a large skillet, over medium high heat, add 2
    tablespoons olive oil and saute chicken mixture until chicken is no longer
    pink.
    Serve in tortillas.

    Fajita Spice

    1 tablespoon cornstarch
    2 tablespoons chili powder
    1/2 teaspoon salt
    1 teaspoon paprika
    1 teaspoon sugar
    1/2 teaspoon granulated garlic
    1/4 teaspoon cayenne -- or to taste
    1/4 teaspoon cumin
    1 tablespoon tomato powder
    1/2 cup beef stock

    Combine all ingredients in a small saucepan and bring to a boil. Reduce
    heat and simmer 5 minutes.

    Yield: "3/4 cup"
