REQ: Grilled Chicken Breast w/Balsamic

  1. Does anyone have a recipe they especially like for a marinade/baste using
    balsamic vinegar, olive oil, etc., for grilled chicken breasts? I can
    experiment, of course, but if anyone has a favorite I'd like to try it.

  2. try this marinade:

    1/4c. olive oil
    3 tbs. balsamic
    2 tbs. worcestershire
    2 sprigs chopped fresh rosemary

    Grilled Chicken with Herbs

    INGREDIENTS:

    * 2 tablespoons chopped Italian flat leaf parsley
    * 2 teaspoons fresh rosemary, minced
    * 2 teaspoons chopped fresh thyme
    * 1 teaspoon dried sage
    * 3 cloves garlic, minced
    * 1/4 cup olive oil
    * 1/2 cup balsamic vinegar
    * salt and pepper to taste
    * 1 1/2 pounds skinless, boneless chicken breasts

    DIRECTIONS:

    1. In a blender combine the parsley, rosemary, thyme, sage, garlic,
    oil, vinegar and salt and pepper to taste. Blend together. Place
    chicken in a nonporous glass dish or bowl and pour blended marinade
    over the chicken. Cover dish and refrigerate to marinate for at least
    2 hours or up to 48 hours.
    2. Preheat grill to medium high heat OR set oven to broil.
    3. Remove chicken from dish (disposing of leftover marinade) and
    grill or broil for about 6 to 7 minutes per side, or until chicken is
    cooked through and no longer pink inside.

    My favorite is 1/4 cup vinegar (or citrus juice), 1/2 cup olive (or
    other) oil, and 2-5 cloves of crushed garlic, with salt and pepper to
    taste. For a real treat, add a handful of chopped mint and/or parsley.

    This is also basically my dressing for my really good wheatberry salad.

    serene, that sounds delicious! I think I would especially love the mint.
    We're eating almost no meat except chicken breasts right now, so this will
    be on the grill very soon.

    Try the (Peach?) jam and chipotle glaze I posted earlier this month or
    in June. I can't remember which type of Jam I used in the post. Use the
    sauce/glaze really late in the grilling...last 3-5 minutes or so.
