Had some of canned pumpkin puree leftover from making a small Pumpkin
Cheesecake. I used it to make a mashed potato substitute using basic
recipes you would with Yams or Sweet Potatoes.
Some butter, a little cream, some Splenda for baking Brown Sugar
(sugar free maple syrup would work too), a little salt and cinnamon.
Heated it up in the microwave.
It is a really good choice for substitute. Lower carbs than Butternut
Squash, Yams, or Sweet potatoes, AND higher fiber than all of them.
Not for early stages of low-carbing but good for maintenance. I'm
thinking it will be a nice holiday substitute.
