But only one worth using for haddock! Forget the ones using batter-
save that for other fish. Dip haddock in lightly beaten egg. Cover
with breadcrumbs. Fry on one side until lightly browned. Turn and
fry on the other side until lightly browned. Do not overcook, of
course.Lucky youse. It's impossible to get haddock in my neighborhood.

seasoning? I'm flying blind. -
Dip the haddock in flour first, then in beaten egg, then in Italian
breadcrumbs (with some extra parmesan cheese in the crumbs). By dipping
in flour first it coats the fish with egg better. I fry it in half olive
oil and half vegetable oil for a crisper coating. -

difference to the 'crispness' for ?...Curious as to why !

oil. Is there such a thing? If this is your first time trying to fry fish, I'd forget olive oil and
master a recipe using vegetable oil. You may fail a few times. Why use
expensive oil while you're learning? Here's a good starting point:
http://www.epicurious.com/recipes/recipe_views/views/109011Notice that the recipe suggests a thermometer. And, be sure you have enough
oil so that when the fish is placed in it, the temperature's not lowered too
much. Otherwise, you'll end up with soggy, oily fish. -

olive oil but i substitute butter as i do not like olive oil. In the
original recipe the oil is used to both coat the fish and fry it with.
It also uses pepper, bread crumbs, parmesan cheese, cream, dill and
shrimp.

down tend to brown/crisp as well in straight O/O.Shaun aRe
