Anyone got a recipe that would work with peanut butter cookies?

  1. We were supposed to be having our church bake sale tomorrow morning so
    I baked five batches of cookies yesterday. Now the sale's cancelled
    (again) due to rain and general mismanagement (ie.nobody organised any
    publicity so nobody's going to come and buy the stuff because they
    don't know it's on!) And I'm left with five batches of cookies... the
    oatmeal cookies will freeze so they aren't a problem, and I only made
    a little batch of cherry-pecan cookies so we'll just enjoy them, but I
    HATE peanut butter and the recipe made tons...

    I thought maybe I could grind them up and use them to make a piecrust,
    so anyone got a pie recipe that would work well with a
    peanut-butter/chocolate chip crust?

    Put the PB cookies in the freezer, too. Save them for the next bake
    sale. They'll be fine. I store cookies in a wax-paper-lined tin in the
    freezer and pull out what I reasonably need (2 if I'm watching Rob's
    intake) on demand. I wouldn't waste a good PB cookie on a pie crust.

    Maybe you can find, in your area, one of the organizations doing
    Thanksgiving Dinner for the homeless and donate the cookies to them?
    When I was in Anchorage, we volunteered to help cook and serve at the
    Salvation Army's T-day Dinner, and it was an amazingly rewarding day....and
    a whole lot of fun.

    We've only got a fridge-top freezer so there really isn't room for all
    of it... otherwise, I'd freeze them and dish them out when my husband
    wants dessert (ie, every night! lol) I think what I'll do is make up a
    bunch of cookie packages and everyone can take one home from our
    church thanksgiving lunch on sunday.

    I wasn't sure about the freezer thang.
    Make a cutesy scrapbook-y tag for them with a note saying they were to
    have been for the sale that didn't happen and you wanted to share with
    all (as opposed to saying you don't want the wretched things in YOUR
    house!)

    I'm a Peanut Butter Cup fan - I would put a chocolate pie in a peanut butter
    cookie crust (maybe made will Jello brand Chocolate Fudge pudding and pie
    filling). Maybe a few chopped peanuts sprinkled on top. mmmmm mmmmm

    Or, depending on the size of the cookies, I might put a scoop of ice cream
    between two of them and have an ice cream sandwich.

    Or drop them off at the local firehouse. Whatever you do, don't take them
    to an elementary school!

    I was going to suggest the same thing. On some Saturdays when my guilt
    says I should be doing something constructive but I hate to clean
    house, I spend a day baking. Then I take them Sunday for the coffee
    hour after church services. They usually just have coffee. Until it
    gets to, "Jim, welcome! What, no cookies today? Oh well, good to see
    you, anyway." hmph

    Barb's famous brownies, in the new version with cherries and amaretto,
    went over great with that crowd. I didn't tell them there was booze in
    it. 🙂

    P..S. Barb: Have you tried it with cranberries instead of the
    cherries? I bought a package of Ocean Spray "Craisins" -- called
    sweetened dried cranberries, cherry flavor. The texture of raisins
    with a unique flavor. Added to it some of the liquid reserved from the
    last attempt when I used cherries from a can of cherry pie filling,
    since I couldn't find actual cherry preserves to suit me. So I just
    mixed it all by ear (which was a mess to clean out 🙂

    I just found a recipe for Amish oatmeal cookies with chopped up peanuts
    and raisins. Not until I started measuring out all the ingredients did
    I see that it makes about 7 dozen! Too late to downsize. Maybe I'll
    take them to the university class I teach on the day the students fill
    out the instructor evaluation form.

    I'm not proud; I'm experienced.

    Although sometimes public servants are leery of taking home prepared
    food from strangers, for obvious reasons. If you go in with them, stick
    around and chat 'em up a bit and make sure they know who brought them. I
    bet they'll enjoy them!

  17. Alternative to eating or storing the cookies - locate a
    (homeless,battered,runaway,etc) shelter, food pantry, soup kitchen,
    whatever. Give your excess goodies to those who can't afford a treat.
