We have roast. So, there you go!
It's an odd thing I have noticed in the last few years, but Southerners
don't seem to "do" Easter the way Northerners "do" Easter. It doesn't
seem to be a Holiday that is a big family gathering like Thanksgiving or
Christmas. The Biblebelt folk went to church 3 or 4 or 5 times starting
with Sunrise service, the Preachin' in the Park service, regular church,
and Evening worship. shew! We'd race home, wolf down the roast cooking
in the oven, nap for an hour, and then, whoever had little kids, would
get together with friends and/or family with little kids for an Easter
egg hunt and then back to church for Evening Worship. geez.
I remember it being like that. :-)

In many cases, in the North, many celebrations have strong European ethnic
roots, which I think accounts for the elaborate preparations. I lived in
NE Ohio for many years, and many of the people I knew would do this. I
learned a lot of new food traditions, many of which I now make myself.
