pork sung

  1. Pork sung, for those who don't know, is dried, cooked, shredded pork.
    It has a strange crystally thin appearance, like cotton candy. But it
    takes like barbequed pork. A Chinese friend of mine told me he eats it
    with butter on bread, as a sandwich. (I tried this, it's good.) But I'm
    wondering what else, if anything, people do with pork sung. I was
    hoping there might be a few Asian folks (or Asian-savvy folks) who
    could give me some ideas.

    Yummm, I like those Pork sung stick, it's a bit like biscuit finger
    except it's made with Pork sung, I had them as snack.

    There is this glutinous rice pack - basically with pork sung, gerkin,
    fried flour stick pieces, source and any other ingredients you like,
    wrap in glutinous rice forming an hand-side egg-shape like pack. I had
    not tried making that myself, had them in the eateries.

    Hope you come up with something you like!

    What most people I know do with it is try it once and never have it
    again.

    The preparation concept is sort of like a jerky but the texture is all
    wrong. Taste varies from 'sort of like bbq pork' to 'sort of like
    bacon' but I don't think it tastes anywhere near as good as either.
    Sorry, this is on the very short list of things I just don't like.

    I use it on most any rice or pan fried noodle dish: chow fun,
    fried rice, chow miens, etc... I go for the less sweet versions.

    It's basically pork cotton candy. I don't think it's like jerky
    or ... BBQ pork (?!?!?) I guess it's like very finely shredded
    jerky.

    I'd like to try this. I guess I have to hit my neighborhood asian mkt.
    What am I looking for? I mean is it refrigerated, in a can, in a
    plastical bag, or?

    Usually in plastic tubs with snap lids. It will be in the
    nonrefrigerated area. It is usually in the isle with all of the
    spices/seasonings. A good market will probably have a few feet of shelf
    space with various versions and various size containers so it should be
    easy to find.

    The similar fish threads are also good on sandwiches 🙂

    The pork threads can be sprinkled on anything at all. Just a matter of
    taste.

    Meat Flakes

    1 1/3 lbs pork picnic shoulder

    Cut into separate muscle sections and cook with 3 cups of water. When
    very soft, drain off broth and mash the meat flat. Return to the pan.

    Mix with the meat broth and:

    1 tbs soy sauce
    2 tsp salt
    1 tsp MSG (optional)
    4 tbs sugar

    Continue stirring over low heat until very dry and separate.

    Can be fried in 2 tbs lard or veg oil for crispy flakes.

    They're almost always stocked on the top shelf of the isle because
    they take up so much space vertically.

    Look for Formosa brand(s).

    You're looking for something on the shelf at room temp (not in the
    fridge). It's in a little clear plastic tub usually.

    I like meat sung(pork sung) with Frensh bread and Brie. It is very
    tasty.
