Last night I wanted something quick, good and warm in the tummy as we had
been working out in the yard for 3 days. Our job finally done. We were
dirty and hungry. Of course while everyone is showering and relaxing I have
to fix dinner.
I was looking through the freezer trying to decide if we were eating out or
not when I came upon the Costco bag of Ling Ling Chicken potstickers
(www.ling-ling.com) . On the back was a recipe for Potsticker soup.
Sounded like just what I looking for. It turned out very good and the
leftovers were fought over for next day lunch. Man who brings home the
bacon won.
Here's what I did. Enjoy, Lynne
20 frozen potstickers
6 cups of chicken broth (6 cups of water, 6 tsp of better than bouillon)
1 cup of water
1 pkg. of sauce for potstickers
2 T cornstarch
1 cup diced carrots, more or less
1 cup broccoli florets, more or less
grated fresh ginger to taste
1 green onion sliced thinly
Stir together sauce packet and cornstarch and set aside. Bring broth and
water to a boil. Drop in potstickers and cook for 4 minutes. Add
vegetables cook a couple minutes longer until tender. Stir in
sauce/cornstarch mixture until thicken. Stir in ginger and green onions and
serve.
