Professional: He was getting paid to perform.
Journeyman: Implies having experience at a trade or one who knows the trade well enough to teach an apprentice or novice. This term is better used for trades or crafts such as a Mason, or a Carpenter.
A better term in my opinion would be Veteran: A person who has long experience in an activity.
Both terms imply that someone has done some activity for a long time and has expert experience at the activity.
If you think of a journeyman boxer then they have been around for a while, fought many people and not necessarily the best around but still employable and will still give 100%.

Following on from El Loto's very good definition of "journeyman" - the term journeyman can also suggest that the rider in question may not have been a rider who won many races, but nonethesless was a rider who had worked hard for his team and is well respected in the peloton.

The term "journeyman" also is used to describe an experienced professional who has moved from team to team to team instead of spending his entire career on one team.
