  1. These are the best peanut butter cookies in the world. I promise.

    Classic Peanut Butter Cookies

    Amount Measure Ingredient -- Preparation Method

    1 1/2 cups flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/4 teaspoon salt
    1 stick butter
    1 cup peanut butter
    1 cup packed brown sugar
    1/2 cup sugar
    2 eggs
    1 teaspoon vanilla

    1. Preheat oven to 350°F. In medium bowl combine flour, baking powder,
    baking soda and salt; set aside.

    2. In large bowl with mixer at medium speed, beat butter and peanut
    butter until smooth. Beat in sugars until blended. Beat in eggs and
    vanilla. Add flour mixture; beat until well blended. If necessary,
    refrigerate dough.

    3. Shape dough into 1-inch balls. Dip in sugar. Place 2 inches apart,
    sugar side up, on ungreased cookie sheets. Flatten with fork dipped in
    sugar, making crisscross pattern.

    4. Bake 11 to 13 minutes or until lightly browned. Remove; cool
    completely on wire rack. Store in tightly-covered container.

    Yup, those are the best. They're even better if you bake them longer than
    "lightly browned" all the way to "slightly scorched."

    Oh, Lord -- another one who likes burned cookies. Deliver me. :-)
    I was just comparing that recipe with the one I use and Carol's appears
    to be softer (and a better peanut butter taste, too). Do you
    refrigerate the dough and, if so, for how long?

    It gives them a lovely roasted flavor. I never refrigerate the dough
    though. I usually don't have time. Does it improve them any?

    When I take peanut butter cookies to the quilt group I have to scorch two
    whole pan fulls for everybody that likes them! We're not alone!
