Well, I'm broke, had no $$ for groceries (will be this way til the
15th) and really don't have much in the freezer. I've got odds and ends
in the fridge, and managed to pull off a fantastic dinner!
Lasagna Rolls - 7 leftover noodles filled with the following odds and
ends: ricotta cheese, breadcrumbs, italian seasoning, chopped almost to
a powder walnuts, roasted red peppers, asiago cheese, port salut
cheese. Then one of the following: sun-dried tomato pesto, anchovies,
or capers. There were tiny amounts of these, enough for 2 or 3 of each.
Was looking through the freezer for some basil pesto - I KNOW there's
some in there somewhere! - but had no luck.
Topped them with a creamy parmesan sauce (sometimes known by the "A"
name) and sprinkled them with parsley, then baked them in the oven for
half an hour.
Served them with half a loaf of multigrain french bread found in the
freezer, slathered with garlic butter.
Mixed together the picked-through leftover salads from the last 3
nights. Took out anything soggy but there was plenty of crisp lettuce
and veggies, apples, crumbled cheese, sunflower seeds, all sorts of
stuff in the final mix! Crazy salad, I admit, but it worked. Dressed
with your choice of leftover ranch or buttermilk-chipotle-lime
dressing.
Finished off the last glass of sweet tea and the half bottle of tj's
ginger lemonade with it.
The question is...... does my fridge look CLEANER or just EMPTIER?!?!

LOL, I figured it would be beans and rice for the rest of the week.
Scrounging through my cupboards has turned up some french green lentils
and some white beans. A can of peas. A jar of roasted red peppers. Some
bowtie pasta. Half a package of smoked salmon. One zucchini. Part of a
tub of cream cheese. tuna. swiss cheese. eggs. grape tomatoes. Enough
to finagle meals til Friday, anyways.
I love an adventure!
