    What is more common...adding tomatoes or not?

    I want to try my hand at some tonight....have all of the common ingredients
    together but the one thing that is inconsistent in the recipes I've seen is
    the use of tomatoes or tomato sauce.

    What I have down at my favorite Indian restaraunt has just a slight pinkish
    color so I thought I may add just enough tomato sauce to get the color I see
    in theirs.

    I adore malai kofta. In my experience at restaurants in both this area and
    ones I've visited on the East Coast, tomatoes are pretty standard.

    All of the recipes I have tried call for tomatoes but they seem to call for
    more tomato than the restaurant versions. I should experiment more to get the
    creamier, less acidic version I like
