My grandmother's German Potato salad was always served HOT. At least you
aren't taking that yukky mayonnaissed based stuff! Down in Florida that
would be sick city in a couple of hours! 🙂

Glad you're feeling up to going to a cookout. I'm going to grill a cornish
game hen. I'd planned it for yesterday but never took it out of the
freezer. I'll split it and eat half and freeze the other grilled half.
Think I'll make some rice to go with it. Have a great time!

BTW, I left some messages with the local news and also with my state senator
who is an MD on your behalf.

LOL If it's anything like my German grandmother's potato salad (and she and
I talked, it is) it's got a vinegar base and crumbled bacon.

In Grandma Mac's, the potatoes are cooked with some minced onion, then
drained. Then tossed in the hot bacon fat. Remove and mix with 1/4 cup of
white wine vinegar, about 1/3 c. water and a Tbs or two of sugar to offset
the tartness of the vinegar. Stir in crumbled bacon and season simply with
salt & pepper. No mayo in sight in this stuff. And it's served hot or room
temp, not chilled.

Grandma C's German Potato Salad
Kili

Ingredients:

2 quarts red potatoes, peeled
9 slices fried bacon
1 cup chopped onion
1/2 cup bacon drippings
2 Tbl. sugar
2 Tbl. flour
2 tsp. salt
1/8 tsp. pepper
1/2 tsp. celery seed
1 cup water
2/3 cup white or cider vinegar

Directions:

1. Boil potatoes, then slice when done and cooled. Set aside or put
into a bowl.
2. Take the chopped onion and cook over low direct heat using the
bacon drippings.
3. Mix sugar, flour, salt, pepper and celery seed together. Blend
into onion sauté.
4. When onions are wilted, pour in the water and vinegar. Stir
mixture until it boils for about 1 minute.
5. Pour onion and vinegar "dressing" over sliced potatoes. Crumble
the bacon slices over potatoes. Lightly fold everything in together.
6. Garnish with bacon, egg and/or parsley.
