are not diphtongs, that is, each vowel sound below should be one vowel
only: "ay" -> "e" as in "help", "yuh" -> " " (that is, delete it).

Not completely accurate.

The native language of Balear Islands is Catalonian. In spanish the team
name would be:

Caja de ahorros - Islas Baleares.

They may use the french - catalonian combination for marketing reasons
(following the Euskaltel model for Euskaltel - Pays Basque during the TdF)

However the figurative pronunciation sounds quite right to me.
