It's my first time using STI shifters.
I notice that you can downshift (into bigger rear cogs) 2 or 3 gears at a time, if you press the brake lever into a more extreme angle.
Question:
Are these shifters designed to shift more than one gear at a time?
-Or am I doing damage somehow by skipping gears?

You're fine. They're absolutely designed for downshifting like that. Upshifting is one at a time, though. Fun, aren't they? I was quite impressed when I first tried STI shifters.
Now, if the lever doesn't move smoothly or without significant effort in downshifting, your setup could be messed up (e.g., bad cable routing, bad cable or housing). Barring that, you probably ought to worry more about shifting technique.
