Soup question-how long is it safe to eat?

  1. Greetings all,
    I have been making various varieties of home-made soup recently in
    order to take some to work for lunch. I usually make split-pea(with
    ham-hock), chicken noodle, chili, and some non-vegetarian vegetable
    soups.
    My usual routine is to whip up a big pot on the weekend, and have some
    for lunch througout the week. My question is, how long would these
    things last in the fridge and still be safe to eat?
    If I make a pot of soup on Sunday, would it still be OK on Thurs or
    Fri?
    And yes, I am aware I can freeze some.

    Yes, if your nose says it's ok, and you heat it up to a boil in the
    microwave
    at work, you should be fine through the end of the week.

    If you're single, you could do what I used to do: get a dozen 2 cup
    freezer-to-microwave containers, and store your soup in those. That
    way,
    you can freeze them, grab one in the morning, and take it to work and
    not
    only will it stay cold, but will definitely be safe. And this way,
    you might have
    enough to save a variety of soups so you don't have to eat the same
    thing
    each day if you don't want to.

    That depends on how cold your refrigerator keeps. If it's below 35
    degrees, it should be fine for over a week -- unless you are a real pig,
    of course ;-) If your fridge is closer to 40 degrees, it gets a lot
    more iffy.

    Trust your nose when you reheat the soup.

    Soup is pretty nutritious both for humans and bacteria. If I use a
    pressure cooker to make it and keep it covered (or bag in in portions),
    I set a 5 day limit under refrigeration.

    Haven't managed to poison myself with it yet. ;-)

    I keep my homemade soup for a week. It's always been fine.

    Absolutely, maxine! As the resident soup-a-holic I concur you can make a
    variety of soups over the course of a weekend. Freeze some in those small
    containers, take them to work and they thaw out in time for lunch. Quick
    zap in the microwave and throw in some crackers, you have a nice hot lunch.

    Otherwise, yes, use your nose. If it doesn't smell right it's probably not
    right. 3-4 days depending upon the soup.

    About the same here, and same goes for dutch meatball soup :-)

  10. A lot depends on how you cooled the soup after cooking it. A obviously bad
    optiion would be to cook it, then leave it uncovered to cool for many hours
    at room temperature. But even covered, cooling very slowly at room
    temperature can give organisms a good head start, especially if you do some
    sampling along the way.

    I put a hot stockpot into a sinkful of cold water, maybe change the cold
    water a few times. Then I portion out the soup into the containers and
    chill them. In the winter, I might put the stockpot or sealed containers
    right outside on the deck to cool in the snow.

    And of course, as you mentioned, freezing is the very best.

  11. I think 5 days is okay, particularly if you initially let it cool
    uncovered for about an hour before you first put it in
    the refrigerator.

    If you put a hot pot of soup directly in the refrigerator,
    and/or have let it cool while covered, it stands a much better
    chance of spoiling.

    It depend on how you store it. It should be fine on Thurday or
    Friday, however if you take it out and bring it to a boil on the stove
    ( not the microwave) every few days it should last for a few centuries
    [err, assuming you add things as time goes along. ]

    I wouldn't know. I usually eat a bowl then put individual servings in
    baggies and freeze.

    Then you have those scardy cats who are afraid to let anything cool down
    before they put it in the fridge/freezer. (I have NO idea what they thought
    people did before freezers were around... you know, back in the day when ice
    boxes were the exception rather than the norm.) -Jill

    If you make it on Sundayk Thursday is fine and it should still be safe
    on Friday but that's the last day I'd be willing to eat it - my
    personal limit for cooked foods like that is five days.
