our shirataki noodle experiment

  1. I FINALLY found these things, at our food co-op, and bought a bag to try. I
    drained and rinsed them real well, then left them in the strainer while I
    browned some chunks of beef in bacon fat, added a 1# bag of frozen stir-fry
    veggies and a can of mushrooms and bunch of seasoning, then cooked it until
    the veggies were done...added the shiratakis and stirred them in, gave it
    all a few more minutes for the noodles to pick up the flavors, and it was
    GREAT!!!!!!! I like the texture of those things better than grain-based
    pastas, and certainly better than dreamfield's. I'll be stocking up on
    them, and will be making a lot more dishes with them!

    The only question I have is with them clumping together, they're hard to
    separate, does anybody know what to do about that?

    I love them too and they are inexpensive. Were they in a fridge at the
    co-op? That's how I get mine, people may have a hard time finding them if
    they are looking on the shelf.

    i didn't have that problem. Were they clumping before , during or after
    cooking?

    🙂 I get mine at our local food co-op (www.oryana.coop), I was going to buy
    them online by the case but they're less expensive locally. I also order my
    wholesale supplies for my company through them though, so I'll probably
    order a case with my next supply order.

    After hearing mixed reviews I wasn't sure what to expect when we tried them
    yesterday but we were so pleasantly surprised.

    They didn't really stick together, it was just hard to separate the clump of
    noodles. But this morning I just read in Laura Dolson's archive that she
    cuts hers up with kitchen scissors after she rinses them. I'll do that next
    time, I'm sure it will make a difference.

    I was surprised that my husband likes them too, it's nice to find another
    enjoyable food to add to our meal rotation 🙂.

    Less drain. Toss them in boiling water and let that do the rinse
    and drain function. Not great for stir fry use so add them separately
    in that case.

  6. Could you please exactly which brand and type you used? IOW, the white or
    green (w/seaweed) shiritake, or the one with the tofu-blend that comes in a
    couple different shapes?

    They're white, and I got the fettucini shape. I don't have the bag but it
    has the word TOFU in fairly big letters on the front, if that helps 🙂.
