  1. Help! I'm on the scrounge!!!

    Some time ago I saw a brief tv show (called Wicked I think, featuring
    decadently sinful desserts or sweets from 10 famous chefs, food
    critics and the like) which featured Vincent Schiavelli who made a
    luscious looking Almond Pie.

    Have endeavoured to track down the recipe (didn't manage to get the
    entire list of ingredients down during the show) and have been
    unsuccessful in getting anything via Google other than a mention that
    the recipe is listed in the "Many Beautiful Things" cookbook by VS.
    Sad to think he is no longer with us, I thoroughly enjoyed his style
    (in movies) and the unexpected bonus that he was a great foodie to
    boot.

    Anyone out there by chance have the recipe and willing to share?

    VS was 'downunder' doing a Tastes of Australia tour with a myriad
    other cheffies (Aussie and overseas ones) then ABC did the 5 minute
    spotlights and endeavoured to sell the shows to other interested pay
    tv channels worldwide. Was hoping someone might have written down the
    recipe....

    I've googled till I'm blue in the face and still no joy tracking down
    this particular recipe.

    Was so long ago now can't find the scrap of paper which had some of
    the ingredients... but from memory Vincent made a shortcrust pastry
    (not a prob) then pulverised blanched almonds in a blender to make an
    almond paste - but there were several other ingredients - then topped
    with whole ( not skinned) almonds and baked at low temp. It looked and
    sounded awesome... sadly wasn't fast enough finding writing
    implements! Was only a 5 minute spotlight filler so I didn't stand a
    chance and haven't seen it repeated - even on cable tv food channel...
    sigh.

    How've you been anyway Peter...long time no see! Last time was before
    Christmas 06.
    Mind you, I've been absent myself, Mum had a stint in hospital with
    liver cancer so have been otherwise preoccupied.
    And then there was the 'surprise' 50th birthday celebrations.. lol

    Chocolate almond [censored]

    Chef: Rob Scott

    You need:
    125 grams dark chocolate
    1 tablespoon of brandy or rum
    1 tablespoon of black coffee - instant coffee granules
    100 grams unsalted butter
    100 grams castor sugar
    100 grams almond meal
    3 eggs, separated

    Method:
    Combine chocolate, brandy and coffee in a bowl over a saucepan of boiling
    water. Add the butter and sugar, allow to melt, then mix well. Remove from
    heat.

    Add almond meal and stir well. Add egg yolks one at a time, and mix well.

    Beat egg whites until stiff, and then carefully fold into your chocolate
    mix. Pour the mixture into a cake tin lined with greaseproof paper, and
    bake in an oven set at 160° for 30 to 35 minutes. The cake will be a
    little gooey in the centre and should develop a crust.

    Allow to cool completely in the tin, then turn out carefully onto a
    serving plate, dust with icing sugar or ganache and serve with double
    cream.

    similar.

    Almond Pie

    from Many Beautiful Things by Vincent Schiavelli

    For the filling of this pie, fine almond meal is mixed with sugar,
    butter and eggs to create a delicious sweet paste. In former times the
    almonds were crushed with a mortar and pestle. By using a food
    processor instead, the time required for this preparation is reduced
    to minutes.
    Due to the time needed for the crust and filling to set, it is best to
    prepare this pie the day before it is to be served.

    For one 9 inch pie - 12-16 servings

    For the pasta frolla crust:-
    2½ cups cake flour, plus additional for dusting
    ¼ tsp baking soda
    pinch of baking powder
    3/4 cup granulated sugar
    3/4 cup (1½ sticks) unsalted butter
    4 egg yolks
    1 to 2 Tblsp milk

    For the filling:-
    1 pound (approx 3 cups) shelled whole raw almonds
    1¼ cups granulated sugar
    1 Tblsp cake flour
    3/4 cup (1½ sticks) unsalted butter
    3 eggs, lightly beaten
    1 tsp almond extact
    2/3 cup bitter orange marmalade
    4 ounces (approx 3/4 cup) whole blanched almonds
    confectioner's sugar, in a shaker

    Prepare the crust:
    In a large bowl sift together the flour, baking soda, baking powder
    and sugar.
    Using an electric mixer fitted with the paddle, on low speed or by
    hand, cut or rub in the butter until the flour has the consistency of
    cornmeal, about 2 minutes.
    Lightly beat the egg yolks and quickly work them into the mixture with
    the mixer or spatula.
    Add enough of the milk to form a soft dough.
    Turn out the dough onto a lightly floured surface and knead it just
    enough to form a very soft dough with a slightly sticky surface.
    Depending on climatic conditions, it might be necessary to add some
    extra sprinklings of flour for the dough to come together. Remember
    that over kneading pastry dough will make it tough.
    Form the dough into a ball, cover it with plastic wrap and let it
    rest, refrigerated, for 2 hours.

    Prepare the filling:
    Coarsely chop the one pound of almonds in a food processor by pulsing
    for a few seconds. Add the granulated sugar and process for about one
    and a half minutes, until the almonds form a very fine meal.
    Add the flour and pulse once or twice to mix it in.
    Add the butter and pulse a few times until it is thoroughly mixed in.
    Combine the eggs with the almond extract in a small bowl and add this
    to the almond past, pulse to amalgamate.
    Transfer the paste to a bowl, smooth the top and refrigerate uncovered
    for about 1½ hours until well set.

    Assemble the pie and bake:
    Preheat the oven to 375DegF with rack positioned in the upper third.
    On a lightly floured surface roll the dough out to form a 13 inch
    circle and use it to line a 9 inch springform pan or a pan with a
    removable bottom and 2 inch sides.
    Coat the bottom of the crust with a thin even layer of marmalade.
    Spread the filling over the marmalade in an even layer.
    Smooth the top and then score it with the tines of a fork or a pastry
    tool
    Place a blanched almond at the centre of the pie. Starting at the
    outside edge, cover the top with blanched almonds arranged end to end
    in concentric circles. There will be space between the last circle and
    the centre almond revealing the filling.
    Bake for 25 to 35 minutes, until the crust around the top edge is
    quite browned.
    Cool the pie in the pan for 10 minutes and then remove it.
    Cool to room temperature. Do not refrigerate.
    Just before serving, lightly dust the top with confectioner's sugar.

    This is exactly how I remember him making the dessert - am so looking
    forward to making it this weekend.

    That's him... among his other 120 film and tv appearances.
    Died 26 December 2005.

    made the pie on Saturday and we had it as dessert on Sunday...
    as I had a couple of jars of my homemade cumquat marmalade, I
    substituted that for the orange variety and it was nicely [censored] and
    really added to our overall enjoyment of the pie.

    will definitely be making it again, it was luscious, not too sweet and
