I had pike for the first time this year, in a no starred little restaurant in Bargemon.
It was in a wonderful in a creamy white wine sauce, and the fish was caught that morning.
Enjoyed it, but can't say I'd order it if there was nowt else on the menu that took my eye.
Best way to have Pike is to catch it first ... kill it, then after gutting and cleaning wrap it in tinfoil with a large knob of butter with some locally found herbs/greenery such as wild garlic etc and chuck it over woodfire embers for about 20 minutes. Freshness is everything with Pike.
When the packet is opened the smells and flavours are fantastic.
