Maybe they only use all natural organic peanutbutter that's freshly
ground as they need it with no additives of any kind. That's neither
creamy nor chunky, but gritty.

You are almost correct. In this instance the CYA disclaimer is just
there to fend off the "You should have had this or that answer" remarks.

The "mill" at my local Gene's Fine Foods allows you to set the
grind very similar to a coffee mill. If I were to "make it myself"
with my Cuisinart, it'd be chunky without the extra step of adding
chopped peanuts. <shrug>
