For a healthy, yummy snack, try these whole-grain granola bars.
Individually wrapped, they freeze well and will stay fresher, longer.
Take one to go in your book-bag or purse for an energy boost in the
middle of your day.
Dry Ingredients
(24 servings)
* 3/4 cup all-purpose flour
* 1 1/2 cup brown sugar
* 1/4 cup granulated sugar
* 2 tbsp wheat germ
* 2 tbsp nonfat dry milk
* 1/4 tsp baking soda
* 1/4 tsp salt
* 3 1/2 cups quick-oats
* 8 oz chocolate chunks
* 1 cup dried cranberries
Wet Ingredients
* 3/4 cup vanilla yogurt
* 1 tbsp applesauce
* 1 tbsp canola oil
* 1/2 tbsp skim milk
* 1 tsp vanilla extract
* 1 egg, lightly beaten
Instructions
Preheat oven to 350°F.
In a large bowl, combine all dry ingredients (flour through cranberries).
In a small bowl, combine yogurt through vanilla extract. Stir well.
Gradually stir in lightly beaten egg.
Gradually add the yogurt mixture to the dry ingredients. Stirring until
the dry ingredients are evenly coated with the yogurt mixture. It should
be difficult to stir the mixture; this is normal.
Pour the mixture into a 13X9 baking pan, coated in cooking spray. With a
large spoon, press the mixture evenly and firmly to pack it down in the
baking pan.
Bake at 350°F for 30–40 minutes, or until the top and edges are golden
brown.
Cool completely. Cut into small squares.
Individually wrap the granola bars in foil or plastic wrap. Seal in a
plastic Ziploc bag. Freeze the granola bars and take one out in the
morning for a healthy, yummy snack later in the day. (It only takes about
1 hour for the granola bar to thaw.)
though my choice would be:
Cranberry Swirl Coffee Cake
1/2 c Soft butter
1 c Sugar
2 Eggs
2 c Flour
1 ts Baking powder
1 ts Baking soda
1/2 ts Salt
1 c Yogurt
1 ts Vanilla
1 cn (16oz) whole cranberry sauce
1/2 c Chopped nuts
Cream butter, then gradually add sugar and blend until fluffy. Add eggs,
one at a time, beating after each addition. Sift together dry ingredients
and add to batter alternately with yogurt. Add vanilla. Grease a tube pan
and spread a thin layer of batter over the bottom. Stir the cranberry
sauce until well mixed; then spread a thin layer of it over the batter.
Add another layer of better, and a layer of cranberry sauce, a layer of
batter, and end with cranberry sauce. Sprinkle nuts over top. Bake in
preheated 375 F oven for 55 minutes, or until a toothpick inserted well
into the center comes out clean. Cool in pan on rack for 5 minutes.
Remove from pan and drizzle Almond or White Icing over the top. Serves 8
to 10.
