  1. Fish Pilau with Mushrooms

    1 lb. fish
    1 tsp. salt
    2 tbsps. oil
    1/2 cup mushrooms
    1 oz. pea flour
    1/2 lb. rice
    1/4 cup lemon juice
    1 crushed cardamom
    1/2 tbsp. paprika
    2 sticks cinnamon
    1 onion, sliced
    1/4 tsp. nutmeg
    3 cloves garlic, crushed
    1/4 cup roasted almonds
    1/2 cucumber, sliced
    1 cup yoghurt
    1 tsp. ground fennel seed

    Wash, clean, and dry fish. Cut into serving pieces. Rub pieces with pea flour,
    oil, lemon juice, and paprika. Set aside for 15 minutes. Wash fish again and set
    aside. Put butter in frying pan, add onions, stir-fry for a while. Add minced
    garlic, 1/2 cup yoghurt, and fennel seeds. Pour mixture over the fish and let
    stand for 15 minutes. Heat oil and fry fish till pieces are brown. Sprinkle with
    salt. Slice mushrooms, sauté in butter, and then sprinkle with 1/4 cup water.
    Cover and simmer for a while. Cook rice in another pot. When half done, add
    remaining yoghurt and cover. Cook until tender. Place fish in a casserole; top
    with rice. Sprinkle with cardamom, cinnamon, and nutmeg. Dot with butter. Add
    salt according to taste. Cover and leave on low heat for 30 minutes. Garnish
    with fried almonds and sliced cucumber.
