Need a pasta recipe to use goat cheese

  1. I have some leftover goat cheese that I purchased to use in a salad. Does
    anyone have a pasta recipe that uses goat cheese? I've done a search, and
    everything I found is so complicated and uses ingredients I don't have. I'd
    like a simple pasta recipe I could make tonight.

    My daughter steams broccoli, tosses that with cooked penne and a
    little fresh chopped tomato and basil, and crumbled goat cheese for
    dinner.

    Another favorite goat cheese dinner, is baguette with goat cheese,
    sundried tomato, smoked salmon, and thin Bermuda red onion.

    Another is orzo, sundried tomato, parsley, and crumbled goat cheese.

    I think we use goat cheese more than any other cheese lately.

    Is it squishy like chevre or crumbly like feta?

    If it's crumbly, make a pomodoro sauce and sprinkle some
    big crumbles on it when you plate it.

    If it's squishy, you could use it to stuff canneloni,
    or in place of ricotta.

    Soft goat cheese, sliced strawberries, and a balsamic
    vinaigrette with field greens.

    Well, this is too late, since you already made dinner by now I'm sure 🙂
    But, for next time!
    Make a small pasta, like orchiette. Reserve 1/2 cup pasta water, drain the pasta
    well. In a deep sided pan (or a wok), toss the pasta with the goat cheese (if it's
    firm, crumble, and if it's soft, chunk it up into teaspoon sized pieces), sun dried
    tomatoes (the kind packed in oil, drained and chopped or sliced), fresh basil
    (chiffonade), the reserved pasta water and a bit of cream. Add lots of fresh ground
    black and white pepper. This is also good with some chicken added in.

    I was going to suggest something similar but would add toasted pine nuts
    as well.
