I buy those Tyson Roast chickens at the grocery store and use them all
the time for salads, eating chicken pieces, sandwiches, etc. I notice
they are dated a month out usually. It says no preservatives on the
wrapper. I am wondering if I roast a bunch of chickens and
individually vacuum pack them, can I keep them a month? It seemed
like a long time to me.

is too long, myself. Freeze them after sealing and they will keep a year,
easily.
