I've used all 3 in 9 speed and I get the impression that the ultegra doesn't jump gears as easily as 105 or Tiagra.

Imagination, mostly due to differences in wear. The only diff is finish/weight between the groups.

I'm going to guess the differences you have experienced have more to do with the derailleur tuneing. -
So there's no difference in the design, such as the cuts that help with shifting?
