  1. Low-Carb Oatmeal Peanut Butter Cookies

    1 cup oatmeal
    1 cup peanut butter
    1 cup splenda sugar substitute
    1 tablespoon vanilla extract
    1 egg

    Preheat oven to 350F.spray a cookie sheet w/cooking spray. Mix the
    oatmeal,peanut butter,splenda,and egg all together. Roll dough into
    walnut-sized balls and place 2 inches apart on the cookie sheet. You get
    about 20 cookies

    Dip a fork in more splenda and flatten the cookies crossways, like you do
    the usual peanut-butter cookies. Bake 9-10 minutes Divide the number of
    cookies by the number of carb in the oatmeal, peanut butter to get a count
    per cookie.
