Brownies, Yum!

  1. Buddy (DS-10) has been in a brownie making mood lately -- he made
    a double batch tonight and dang, they're so good! He's using a method
    that he and I mutated from the original Wesson brownie recipe:

    Triple Chocolate Brownies - Jani & Buddy

    Ingredients:

    2 squares baking chocolate, unsweetened
    3/4 cup flour
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    1 tablespoon cocoa powder, unsweetened
    1 cup granulated sugar
    2 eggs
    1 teaspoon vanilla
    1/3 cup cooking oil
    1 cup semi-sweet chocolate chips (I use mini-chips)

    Directions:

    Preheat oven to 350º F. Combine flour, baking powder, salt, and cocoa
    powder in small bowl, sifting if necessary. Melt chocolate squares in
    very small bowl in microwave or over double boiler. Let cool slightly.
    In medium bowl, blend eggs and sugar; add oil, vanilla, and melted
    chocolate squares, mixing well. Stir in flour mixture in 2-3 sections,
    blending well after each addition. Spread in greased 8x8 inch baking
    pan. Bake 30 to 35 minutes or until toothpick inserted in center comes
    out with fudgy crumbs. Cool in pan; cut into squares. Makes 9 big
    brownies or 12 medium ones.

    Chocolate squares are one ounce here (Canada).

    Well the bowl is licked clean and the brownie is presently in the oven. I
    had to make a management decision on the choc chips though - I mixed them
    through. Should they have been sprinkled on top instead? I have never seen
    brownies before (obviously I've heard of them) so I don't know what to
    expect.

    In Aus a square of choc would be about the size of the last joint of your
    thumb, even on cooking choc. We don't have a "square" (that I am aware of),
    just like we don't use sticks of butter. :-)) I ended up using Nestle
    Plaistowe Couverture 63% Cocoa cooking choc. In the supermarkets between
    this and the fake stuff there is not a lot of choice. Unless I get down to
    Sydney and the speciality choc stores where they make up blends, much like
    the coffee connoisseurs do, I have to make do with what I can get.

    Thanks to all for your help, and I will let you know after dessert what it
    was like!

  7. We had some for dessert and found them to be scrumptious. Well actually we
    had some before dessert as well. I mean "allow to cool in pan" - what kind
    of instructions are they??? :-))) Just the barest luke warm - mmmmmm. My
    sis was thinking of reheating some and having it with icecream. No icecream
    to be had so she will just have to have some in her lunchbox tomorrow. Life
    is tough.

    Don't you realize that brownies are very fatting? Gawd you must b
    another one of thos obese Americans I hear about back there. Now over
    60% Americans are obese. By 2020 100% of Americans will be obese. My
    Gawd people lets do something about that.

    I know you're teasing but I added that instruction because I've found
    that if I cut into them when they're too hot, they seem gooey inside.

    You did right, we mix them in. The original recipe only called for
    the baking chocolate, but last year, Buddy & I decided to "kick it
    up a notch" as Emeril would say. I came up with the cocoa powder
    addition and Buddy wanted chocolate chips. I was afraid it would
    be too much, but I was wrong, fortunately.

    On the East coast of the U.S., they say "stick" of butter, but here
    on the West side, we call them "cubes". The butter here is actually
    shorter and thicker than the sticks. I can't imagine why they are
    different though.

    Heck, that's practically what I used -- I have Nestle Chocolatier 62%
    cocoa bittersweet chocolate. :-)

    It is also a matter of ingredients. I find home made ice cream very
    satisfying and eat only one small scoop of it at a time, If I eat cheap
    commercial ice cream I want more. My brownies are made with eggs,
    chocolate, sugar and butter, all very rich, but like the ice cream, one
    small piece at a time is all I need.

    Here's another little thing to do with brownies. (I like nuts in them,
    always, so assume brownies with nuts.) Pour and spread the batter into the
    pan and then using a teaspoon drop small blobs of raspberry jam here and
    there. Bake as usual. Line the pan with paper, though, because the jam
    become molten lava and bores down through to the bottom. Partially cool
    before removing and cutting. I am not much of a sweets lover, but I liked
    these.

    I like brownies with nuts too -- unfortunately, nuts don't always
    like me. I love the raspberry jam idea. IIRC, Barb S. does something
    similar with her award winning Peach-Raspberry jam. I need to try
    that sometime...
