  1. Anyone know a source for fatback? I've tried using salt pork, but it's
    not the same--too salty.

    I live in the Phoenix, AZ area, but a generic source would be okay.

    Neiman Ranch sell it for about $5/lb, if you really want to mail
    order it.

    Go to one of the Ranch markets around town. Not the 99 Ranch market,
    but the mexican ones. There is one on Thomas I believe....

    Any market in your area where there is an old fashioned meat counter with
    your friendly butcher behind it should be able to help you. As Christine
    says, any Mexican market can do this. As well any Chinese market can,
    including Ranch 99, can.
    As you know, you need "back fat", and you have to make certain this is what
    you are getting. If you're making pate you unquestionably need back fat. I
    sure wish I could find non-hydrogenated fresh lard in the Bay Area. So far I
    haven't been successful.

    Any Mexican market that makes their own chicharrones and/or
    carnitas will have fresh lard. That includes most all the
    Mexican markets in East San Jose. I can't vouch for the East
    Bay.

    I went to a Mexican market this weekend and what they sold me wasn't
    fatback. Not sure if it was a language issue or what, but it wasn't pure
    fat and I was too embarrassed to complain. I bought it and a soda and
    left. I'll try looking up Ranch Market and try again.

    The one in Glendale is near the new BevMo. So I'll head over to that
    side of the valley next weekend and stock up on beer and fatback.
