Sometimes I add a finely chopped or grated apple to the kraut. If I don't, then I add a tablespoon of brown sugar to a 1 lb. can of kraut. Adjust to your liking...I like the tablespoon. :-) Some kraut, canned or bagged, is more sour than others, so adjusting is necessary.
I rinse sauerkraut because my wife doesn't like it straight. It's amazing how bland you can make it by repeated rinsing. I'm so ashamed.

Yes, that would be much to bland for me, but I understand the sharpness is too much for some folks.

Ain't I sweet?
Indeed! 🙂 Did you remember the pinch of sugar?
Pinch of sugar? I need to remember that.
An apple sliced and mixed in is common and even better.

I will have to try that!
And I found out today what doesn't work. Todays dinner was pork and sauerkraut. I usually add layers of sliced yukon gold potatoes then it is a one pot deal. I didn't have enough potatoes so I sliced up one yam as an experiment. I thought yams go well with pork so maybe it would work. Yams taste unbelievably wrong with sauerkraut.
Thanks for the tip -- I may have done that myself. :-)) Dee Dee

Whoah, I bet. Well, you have to experiment.
You know I am going out to get some pork as soon as I can, and a bunch of sauerkraut, too. I will have to make something different for my husband, he will not eat what he calls "stinky pork." Ha! More for me!

Well, I love pork and sauerkraut and I love sweet potatoes served with pork , but I don't think I'd ever be tempted to actually cook them all together. I might consider serving separately baked sweet potatoes with a pork and sauerkraut meal, but maybe not.

Sauerkraut doesn't go well with sweet foods because sauerkraut it is really not so much sour as it is salty... sauerkraut is pickled in brine, not vinegar.

I like the sharpness, which is why I go for canned or jarred sauerkraut rather than the bagged stuff. Hubby likes the bagged. Ugh. It's just not the same. I, like you, Wayne, add apples as well. :~)

The only problem with adding apples for me, is if I have left-over, I can't stand the apples in it. First time-around, OK. On opening a larger jar, I will only add apples to a small portion.

Fortunately it didn't ruin the dish. The yams were in a small layer and I removed them.

Helpful hint (to some) for the day, Dee Dee
When I add apples I do it just for the sweetness, so I finely chop or usually grate the apple before mixing in. It literally melts into the dish while cooking. I would not like pieces of apple even on the first eating. Maybe that's the problem.

Based on my experiment I wouldn't even try that.
Then I won't. I'll take your word for it.
