    Strawberry ricotta muffins

    Put one of these delicious muffins in your lunchbox - it's guaranteed to
    cheer you up!
    Makes

    12 medium muffins
    Ingredients

    * 375g (21/2 cups) self-raising flour
    * 1 tsp ground cinnamon
    * 150g (2/3 cup) caster sugar
    * 2 eggs
    * 60g (3 tbs) unsalted butter, melted
    * 250ml (1 cup) milk
    * 1 cup full-fat ricotta
    * 250g punnet strawberries, washed, hulled, quartered
    * Demerara sugar, to sprinkle

    Method

    1. Preheat oven to 180°C.
    2. Line a 12-hole muffin pan with 12 muffin cases.
    3. Sift the flour and cinnamon into a large bowl. Add the caster
    sugar and stir to combine.
    4. Place the eggs, butter and milk in a jug and whisk to combine. Add
    the liquid ingredients to the dry ingredients and stir until just
    combined. Stir three-quarters of the ricotta and strawberries into the
    mixture. Place heaped tablespoons in each muffin case.
    5. Top each muffin with pieces of remaining strawberries and a little
    of the remaining ricotta.
    6. Sprinkle top of each muffin with demerara sugar. Bake in the oven
    for 20-25 minutes or until golden.

    Have you tried these yet? They look absolutely delicious! I'll bet they'd

    I'm in one of the strawberry capitols of the world. We have a strawberry
    festival every March. You can get a flat of them for under $5. I'm holding
    onto this recipe until then. I can't wait!!!

    He is in the Southern hemisphere (Australia). His seasons are
    opposite of ours.

    Side note: Hey Cathy, I found out yesterday that So. African plants
    are perfectly suited for my climate. Heh! Probably Austrailian
    plants will survive too.

    When I copied the recipe, I substituted the word Demerara for RAW suguar. I
    have Sugar in the Raw on hand all the time. (It's made on Maui. <g>😉

    Made a similar one awhile back, and lost the damn recipe *again*!!

    So went hunting and found something that is same same.

    I've been ordering in supplies for this weekend (the SO's birthday on
    Sunday)........ finally nailed her down and got her to answer me as to what
    sort of cake she wants.

    Of *all* the cakes I offered, she just wants a plain chocolate cake, but
    with a *whipped* (lighter than dark chocolate) frosting.

    The headbanger of the group will be pleased I'm not spreading toxic poison
    on top of the cake, but making the frosting myself.

    I was all prepared for a jumbo Lemon Meringue, homemade carrot cake, Khalua
    cheesecake, High Apple Pie, .......... the whole gamut.

    And all she wants is a plain ol' chocolate cake........ no fudge cake, or
    mud cake..... just plain ol' chocolate.

    So I'm goinmg to make two cakes instead :-)

    I've still got a bag full of frozen passionfruit cubes, and another of
    strawberry cubes....... more like a coulis..... but just the berries mushed
    up and put in an ice cube tray and frozen, then placed in a ziploc bag.

  20. I'd never heard of Demerara sugar before, so I googled and learned that
    it's what I call raw or unrefined sugar.

    I'd never heard of punnet strawberries, so I googled and think they're
    what I call plain old regular strawberries. Is there a sort of
    strawberry that's NOT a punnet strawberry? I've never seen the term
    used to distinguish one sort of strawberry from another at the supermarket.
