Instead of cooking the lasagna noodles, I've started putting the dried
noodles in the baking pan and covering them with hot water to soak while
I make the sauce. It's easier and doesn't mess up a big pot.

You don't even have to do that. You can just thin your sauce down a bit,
using plenty of it during the layering process. Then bake covered for 45
min, and then uncovered for another 15. Turns out fine!

That works for me. Also I use about 1/4 cup of parmesan cheese in my
ricotta cheese mix. And sometimes for topping I use 2 cups
cheddar/mozzarella shredded cheese mix sprinkle with a little parmesan.

Then you remove and drain them, and proceed with the "traditional"
    assembly?

Yes. I like it better than using dried noodles and trying to compensate
    by watering-down the sauce.

That sounds like a good plan. Despite what *everyone* says, I can
always tell when the pasta hasn't been precooked.

Yes, it's got a kind of slimy texture, probably due to the starches
not being released in the boiling water. Always pre-boil your lasagna
    noodles.

Isn't it at least a 3 cheese rule? Parm, ricotta and mozzarella. :~) And
    lots of it!

I dislike the noodles when the are baked dry like that. They never
rehydrate right, and the sauce gets starchy. However, it might work
really well if you assemble the lasagna (using dry noodles) and then
freeze it to bake later. The noodles should soften while it thaws...
    Might be worth an experiment.

Huh, that's an interesting idea, Bob. If you're willing to give it a shot
(if I'm making lasagna, I'm making it to EAT it immediately <g>😉, let us
    know. I'm curious.

Next time I'm using this technique. One question though, how long should
I leave the noodles in the pan for? It takes me about 3 hours to make my
sauce and I will think this will be way too long to soak the noodles.

It sounds very good. I'd probably add a bit of cinnamon and I really like
mine made with red wine, not sure what I'd do about that.
