since I suspect wine is actually a more ancient alcoholic beverage than

I'd be surprised. I think the cultures that had access to grain got into
the fermentation game before the cultures that had access to grapes. My

Wine could be older.
Fallen fruit ferments very well, thank you.
Wine is made from stuff that ferments into alcohol on its own.
Beer is made from malted barley: barley that has germinated;
activating the enzymes that turn the starch into sugar.
Sake is neither wine nor beer. Originally the enzyme to
convert the starch to sugar was amylase, donated by workers
at the brewery.
