Well, dumb question. Aside from the minimal weight savings, is there any real reason to upgrade my Veloce brake calipers to Chorus calipers, to stay within my guppo?

No. The Veloce calipers are fine. The biggest difference between any calipers is in the pads.

Check out this link from campagnolo.com for a side by side comparison. Surely you can just swap out the pad holders and hardware to get the orbital adjustment.
Then add some nice brake pads.
Use the money you saved to buy some nice new tires.
