I'm looking ahead to Easter! Just ran across a recipe for candy Easter eggs using mashed potatoes, which has intrigued me for a long time.
I haven't made candy before - just which method do I use for dipping the eggs in chocolate? Spoon, fork? All the recipe says is "dip in chocolate mixture". I'd like them to look attractive, rather than messy. Many thanks.

In mixing bowl, mix potato, salt and vanilla. Gradually mix in sugar. Cover and refrigerate until cold. Shape 1/2 tablespoon of mixture into an egg shape.
Heat chocolate and oil until chocolate melts. Dip eggs into chocolate oil mixture. Set aside on wax paper in refrigerator to harden.

Fondant is a traditional center for Easter eggs. It's pretty easy to make. The mashed potatoes just don't do it for me - it's sort of creeps me out like that Velveeta fudge.

Traditional Needham candy recipes (sort of like Almond Joy or Mounds) use mashed potatoes in the filling.

I had the mashed potato eggs years ago and really liked them but had never seen a recipe until I ran across Mimi Hiller's. I mentioned some time back that mashed potatoes go into Italian icecream and that had surprised me, too. Velveeta fudge, Vox? Wow - that would be hard to take!

Yep, here it is in case you have a surplus of Velveeta someday: Velveeta Fudge a.. 1 cup (2 sticks) butter, softened b.. 8 ounces pasteurized process cheese, Velveeta, cubed c.. 1 1/2 pounds confectioners' sugar, about 5 cups unsifted d.. 1/2 cup unsweetened cocoa e.. 1/2 cup non-fat dry milk f.. 2 teaspoons vanilla extract g.. 2 cups coarsely chopped pecans or walnuts In a large saucepan over medium heat melt butter and cheese cubes together, stirring frequently; remove from heat. Sift together confectioners' sugar and cocoa; add to cheese, mixing well. Stir in non-fat dry milk, vanilla and nuts. Turn into a 9x9x2-inch pan; chill until firm and cut into squares. Makes about 3 pounds of Velveeta Fudge.
